Crêpes!

I made crêpes stuffed with béchamel sauce and ham.. and it was delicious!

The crêpe batter itself is very versatile and can be made to make sweet or savory crêpes. Here is the recipe I used:

Crêpes recipe (makes about 25 crêpes)

Ingredients:

- 500g flour

- 6 eggs

- 0.75L whole milk

- 0.25L water

- 40g melted butter

Directions:

Beat the eggs with a little of the milk. Then slowly incorporate the flour while beating. Once all the flour has been added whisk in the rest of the milk and water, making sure no lumps form. Then once it is well mixed, beat in the melted butter.

Now you’re suppose to let the batter rest for 2 hours but I don’t always do that because.. well I want dem crêpes! Now if you’re making savory crêpes you should put in some salt and pepper in the batter. If you are making sweet crêpes you should add in some vanilla extract and a bit of sugar.

Now to cooking the crêpes. I always make then in a pan because I don’t have those fancy crêpes machines. Now you want to heat your pan to medium-high heat and put a bit of butter in it with a paper towel. Once your pan is nice and hot pour in about 1/2-3/4 of batter and rotate your pan to get a nice circle. Let the crêpe cook until the borders are well lifted and it has browned like you want it to. Then flip it! And let it cook on the other side for several seconds or until it’s browned. And bam flip your crêpe unto a plate. 

For sweet crêpes I like to put just nutella or sugar and lemon. But you can get creative!

Béchamel and ham stuffing 

Ingredient

- Diced ham

- butter

- flour

- whole milk

- grated swiss cheese

- nutmeg

- salt and pepper

Directions

In a little saucepan melt 1-2 tblsp of butter then whisk in flour until you form a sort of paste. Once your paste is nice and dry slowly whisk in the milk. Never stop whisking otherwise the béchamel will fuck up. Add milk until you get the consistency you want. You it to be sort of like a thick cream.. Then put in the nutmeg, salt, and pepper according to you taste. Then add in the grated swiss cheese, however you want, and the ham.

Once that béchamel sauce with the ham is done, lay it in the center of a crêpe, roll it up, and place it in an oven dish. Do the same with however many crêpes you want and lay them side by side in the oven dish. Sprinkle the whole thing with grated swiss cheese and stick it in the oven on ‘broil’ in order to brown the dish. And that’s it.
